I tried to make a vegan egg omelette with VeganEgg. It kind of worked

I’m a big fan of Follow Your Heart products. Their VeganEgg (yeah, it’s one word) was the first of its kind to make it into my pantry and we’ve been experimenting with it ever since. For example, their official site recommends:

When baking with VeganEgg, we recommend that you reduce the amount of water used for each VeganEgg in the recipe. These are general baking guidelines. Individual recipes may vary:

If recipe calls for 1-2 ’eggs’, then use 5 Tbsp ice cold water per VeganEgg
If recipe calls for 3+ ’eggs’, then use ¼ Cup ice cold water per VeganEgg

And every pack of vegan egg comes with a little sheet of additional tips. I would not discard this sheet!

The thing is, I can make scambles with the VeganEgg, no problemo. And I’ve read that’s the entry level thing – omelettes are more advanced. My understanding is the key to working with the VeganEgg is to keep it moving – whisking right up to and as you’re putting it in the pan, so if you’re making scrambled VeganEggs, it’s easy to keep it moving. how does one do that when they’re making an omelette? I don’t know. So, my omelette came out kinda pancake-ish – and this works fine if you fry up some sausage and make a breakfast sandwich, but so far, I haven’t been able to achieve a perfect vegan omelette.

ONE MORE THING: Follow Your Heart recommends adding pepper to your VeganEgg and they are one hundred percent RIGHT about that. There’s something about the pepper that brings out the flavor. Definitely try it.
